I have a bit of a love/hate relationship with salads, but I quickly fell in love with them again after pairing it with this deliciously addictive dressing. It’s fresh, tangy, and also makes a great dipping sauce for sweet potato fries, tortilla chips, and burritos.
After I let my husband taste test it he said, “You can just give me a spoon and hand me the rest of the bottle!” So when I went to make this a second time I decided to just double the recipe because of how quickly we went through the first batch. Whether you make a little or a lot, this will quickly become your new favorite salad dressing!
…..
Ingredients:
2 garlic cloves
1 avocado, pit and skin removed
1/2 cup Greek yogurt
1 cup water
1 1/2 cups fresh cilantro leaves
Juice from one lime
A pinch of cayenne pepper
Salt and pepper to taste
Add garlic cloves to food processor and process for 30 seconds to mince. Add avocado, yogurt, water, cilantro, lime juice, and cayenne pepper and process another 30 seconds to a minute. Scrape down the sides and process again until completely blended and smooth.
Season with salt and pepper. Transfer dressing to a large canning jar or sealing container. Serve right away or make ahead. The dressing will keep for 4-6 days (if you don’t consume it all before then)!
Enjoy!
