Every holiday season (okay, really any season) I love making sangria for all of the get togethers with friends and family. This year I threw together a quick and simple one using Red Delicious apples, pomegranate seeds, cinnamon sticks, and cloves. It’s a great make-ahead cocktail that you can do several batches and variations with. I top mine off with champagne for added crispness which makes this perfect for a New Year’s Eve celebration!
(makes 5-6 drinks)
Ingredients:
3 Red Delicious apples, cored and cut into small chunks
3 Tbs pomegranate seeds
3 cinnamon sticks (extra for garnish)
15 – 17 whole cloves
1 Tbs of honey
3/4 of 1 (750ml) bottle of white wine (pinot grigio)
1/2 cup Sailor Jerry Rum
1 (750ml) bottle of champagne (brut)
Sprigs of fresh rosemary for garnish
Add apple chunks, pomegranate seeds, cinnamon sticks, cloves, and honey to a large pitcher. Pour in wine and Sailor Jerry Rum and then gently stir to mix. Cover and refrigerate for 24 to 48 hours.
When ready to serve, add a small amount of fruit to each glass, fill 3/4 of the way full, and then top off with champagne. Garnish and serve.
