King Arthur Flour must have been reading my mind because the other day I woke up to make biscuits and gravy and outside my door was a lovely care package from them! I quickly put the ingredients to use to make some scrumptious whole wheat biscuits for my healthy version of biscuits and gravy.. don’t worry that recipe will be going up tomorrow, but you can catch a sneak peek in this post.
I typically have to mix in all-purpose flour with whole wheat blends because whole wheat is often bitter in flavor, but that wasn’t the case with the the white whole wheat flour. They were fluffy, buttery, and the perfect companion for a heaping mountain of sausage gravy!

(makes a baker’s dozen)
Ingredients:
2 cups King Arthur White Whole Wheat Flour
4 tsp baking powder
1/2 tsp salt
1/4 cup unsalted butter, chilled
1 cup of unsweetened almond milk
Preheat oven to 450 degrees F and line a large baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, and salt. Cut butter into tiny pea-sized pieces and add to flour mix. Use your hands to blend butter into flour until it resembles coarse crumbs. Create a well in the middle and slowly pour milk in.
Stir until all ingredients are well mixed and dough comes together. Turn dough out onto a clean and floured counter-top. Knead with your hands about 10-12 times, mixing in more flour as needed. Pat dough down until it’s about 1/2 inch to 3/4 of an inch thick. Use a biscuit cutter, upside down glass, or mason jar ring to cut out 13 biscuits.
Carefully transfer biscuits to prepared baking sheet, leaving about an inch in between them. Place in the oven to bake for 8-10 minutes or until edges are lightly browned. Transfer to a cooling rack to cool for 5-10 minutes. While they’re still warm, brush the tops with a little bit of melted butter.
