Last week I got the call that my wedding dress was in, but my excitement quickly turned to panic as I realized I had only been to the gym twice in the last month. Let’s also factor in that I was eating Red Velvet Brownie Bites for breakfast that morning. I decided it was time to get serious.. right after I finished those brownie bites of course! 😉
Since we end up going to the gym pretty late, I don’t always want to cook before and after, so I came up with some healthy on-the-go options that require minimal effort to put together. Homemade whole wheat tortillas, fresh spinach, apple, and Greek yogurt make this a deliciously healthy option to enjoy for lunch or dinner!

Ingredients:
1 1/2lbs chicken breasts (2 large chicken breasts)
1-2 Tbs olive oil
Salt and pepper to taste
2 Tbs mayonnaise
2 Tbs plain Greek yogurt
1 stalk (1/2 cup) celery, finely chopped
1 red apple, chopped into small chunks
1 Tbs red onion, finely chopped
1 Tbs fresh parsley, chopped
¼ tsp cayenne pepper
Salt and pepper to taste
6-8 whole wheat tortilla shells – Find my recipe for homemade tortillas here!
Fresh spinach leaves, kale, or green leaf lettuce
If you’re making your own tortillas, start those first. With prep and wait time for the dough it will take about 40 minutes.
(1.) Heat olive oil in a large skillet over low-medium heat. Season chicken breasts with salt and pepper. When skillet is hot, add chicken breasts and cook for 7-10 minutes on each side or until thoroughly cooked. Cut chicken into small chunks and set aside to cool. (2.) In a large bowl combine mayonnaise, Greek yogurt, celery, apple, red onion, and parsley. Once the chicken has cooled, stir into mixture. (3.) Season with cayenne pepper, salt, and pepper. Cover and place in the refrigerator for 30 minutes to chill. (4.) When ready to eat, spread spinach, kale, or lettuce out on the tortilla. Add a few heaping spoonfuls of the chicken salad, roll it up, and eat it!
If you’re gluten-free or trying to cut out more carbs you can always ditch the tortilla altogether and make a lettuce wrap!

Getting your wedding dress in is both a source of extreme excitement and terror at the same time! I wish I’d seen these when I was getting married. So yummy and healthy. A perfect combination!
