While I’ve been back home visiting, my mom went through her recipes and came across an oatmeal raisin cookie recipe that she said was my oldest brother’s favorite. I decided to adapt it slightly and add white chocolate chips for extra sweetness! Baking six dozen deliciously soft oatmeal cookies seemed like the perfect way to spend a day back in my hometown!

(Makes about 3 dozen cookies)
Ingredients:
1 cup (2 sticks) of unsalted butter, softened
1 cup light brown sugar, packed
½ cup white sugar
2 eggs
2 tsp vanilla extract
1 ¼ cups all-purpose flour
½ tsp baking soda
1 tsp salt
3 cups quick oats
1 cup of raisins
1 cup of white chocolate chips

Preheat oven to 325 degrees F.
(1.) In a large bowl, cream together butter, brown sugar, and white sugar. Beat in eggs and vanilla extract until smooth. (2.) In a separate bowl, whisk together flour, baking soda, and salt. (3.) Add to butter and sugar mixture and stir until completely combined. (4.) Fold in quick oats, raisins, and chocolate chips with a rubber spatula until all ingredients are well mixed.
Drop large spoonfuls onto an ungreased cookie sheet and bake in the middle of the oven for 12-15 minutes or until cookies start to lightly brown around the edges.
Let them cool on the pan for 5 minutes before transferring them to a cooling rack to finish cooling completely.
Serve right away with an ice cold glass of milk or store in an airtight container until ready to eat!
