Vegetable Tortellini Soup
This delicious and hearty soup is the perfect meal to warm you up on those arctic winter days!

Ingredients:
2 carrots, chopped
1 large stalk of celery, chopped
½ yellow onion, finely chopped
1 Tbs olive oil
2 Tbs flour
4 cups chicken broth
¼ tsp garlic powder
9 oz package fresh cheese tortellini
2 cups fresh spinach, chopped
½ cup fat free half and half
Salt and pepper to taste
Heat olive oil in a large pot over low to medium heat. (1.) Add chopped carrot, celery, and onion and sauté for 2-3 minutes or until onion is translucent and tender. (2.) Stir in two tablespoons of flour and mix well until veggies are evenly coated. Continue to sauté for another 1-2 minutes. (3.) Add chicken broth, garlic powder, and tortellini and bring to a boil. Reduce heat to low and simmer for about 5 minutes or until pasta is plump and tender. Season with salt and pepper. (4.) Stir in half & half and spinach and continue to simmer for another 2-3 minutes or until spinach is wilted.
Serve hot with a side of crackers or sliced French baguette for dipping.

OMG. Made this for dinner tonight. Other than the onions making me cry and my husband had to take over the chopping of veggies….this soup is so awesome!!!
