Tuscan Kale and Balsamic Plum Salad
I get bored with eating salads pretty quickly, so I love finding new ways to transform a plain one into a zesty and hearty main course. Adding fresh plums and ricotta did just that!

(Makes two large salads)
Ingredients:
3 Tbs olive oil
3 Tbs balsamic vinegar
1 tsp honey
Coarse salt and cracked black pepper to taste
2 medium plums, pitted and thinly sliced
8-12 large Tuscan kale leaves
½ cup ricotta cheese
Whisk olive oil, vinegar, and honey in a small bowl and season with salt and pepper.
Add plums, toss to coat, and then transfer plums to a plate.
Divide ricotta between two plates and season with salt and pepper.
Tear kale leaves into small pieces and toss in the bowl with the vinaigrette. Divide leaves among plates, top with plums, and drizzle more vinaigrette over the top. Serve right away!
