I had some leftover berries from my Whole Wheat Summer Berry Muffins recipe and I decided to juice them up and add them to my mimosas! Which by the way, can we just take a second to appreciate the invention of the Mimosa.. you’re drinking champagne in the morning like a rich housewife but because you add orange juice it makes your day drinking completely acceptable!
That fresh berry flavor, tangy orange juice, and sweet bubbly champagne make the perfect summer brunch cocktail. I served mine up in mason jar mugs because let’s be real.. champagne flutes are far too small and you just KNOW you’re going to have a second one!

(makes 4 mimosas)
Ingredients:
1/4 cup blackberries
1/4 cup strawberries, leaves and top removed
1/4 cup raspberries
1 cup orange juice
1 (750ml) bottle of champagne
Add blackberries, strawberries, and raspberries to your juicer and juice into a small cup. You should end up with 1/4 cup to 1/2 cup of juice.
*Tattooed Martha Tip: Pour 1-2 tablespoons of orange juice into your juicer while it’s running after juicing the berries. Juiced berries have a thicker texture so the orange juice helps to push out more of the berry juice.
Distribute berry juice among 4 glasses, add 1/4 cup of orange juice to each glass, and top with champagne.
Garnish with a few fresh berries and serve!
