After using my juicer for cocktails the last few times, I thought I’d be good for once and make an actual juice! As we’re heading into our warmer days, I wanted something that’s refreshing, light, and gives you plenty of energy to get through the day. This crisp summer green juice is exactly that! Sweet from the pineapple, slightly tart from the lemon, and a light finish of cucumber and mint. You wouldn’t even know that there are two huge handfuls of spinach juiced in as well! Since it makes two glasses it’s perfect for starting your day off with and taking the rest with you when you hit that mid-day slump!

(makes 2 glasses)
Ingredients:
2 large handfuls of fresh spinach
10-12 mint leaves
1 ½ cups fresh pineapple chunks
1 large cucumber
Half of a lemon
Tattooed Martha tip: You get the most nutrients from a juice in the first 15-20 minutes after making it, so I don’t recommend making these the night before or a few days in advance since you lose all of the benefits of a fresh juice.
Prepare ingredients according to your juicers instructions and juice everything into a large glass or cocktail shaker. Stir or shake to mix and pour into ice filled glasses. Serve right away or store leftover juice in the refrigerator until ready to drink.
