Okay, so I was on a bit of a watermelon kick last week, hence another watermelon recipe two days in a row, but this is too good not to post! I’ve never been a big fan of fruity drinks, but then I realized.. it wasn’t the ‘fruity’ flavor I didn’t like, it was all of the extra sugar! I decided to use freshly juiced strawberries and watermelon to add some sweetness without added sugar and I couldn’t be happier with the result! The cocktail is light, bubbly, and perfect for summer!

(makes 2 drinks)
Ingredients:
1 cup (about 6-8) fresh strawberries, leaves and stems removed
1 cup watermelon cubes
8-10 fresh mint leaves
2oz vodka
Sparkling water
Mint leaves, strawberries, and small watermelon wedges for garnish
If you have a juicer, juice strawberries and watermelon into a large glass and set aside. If you only have a blender or food processor, puree the strawberries and watermelon and strain through a fine mesh sieve into a bowl. Press down on the pulp to get as much juice as possible. Set juice aside and discard pulp and seeds.
In tall glasses, muddle mint leaves and then drop in a few ice cubes.
Divide strawberry-watermelon juice between the two glasses, add vodka (1 shot per each glass..unless it’s been a long day), and top with sparkling water. Garnish and serve!

This looks so unbelievably refreshing and fantastic. Do you wanna know what’s horribly tragic? I’m allergic to watermelon! I’ll just use all strawberries instead 🙂
