Strawberry Bread with Homemade Strawberry Cream Cheese

Makes 1 loaf
Ingredients:
16oz fresh strawberries, rinsed, hulled, quartered, and mashed with a fork
1 ¾ cup all-purpose flour
1 tsp baking soda
1 tsp cinnamon
½ tsp nutmeg
¼ tsp baking powder
¼ tsp salt
1 cup sugar
6 Tbs unsalted butter
2 eggs
1/3 cup water
For strawberry cream cheese spread:
8oz package of cream cheese, softened
2/3 cup strawberry preserves
2 Tbs powdered sugar
In a large bowl combine all ingredients for the spread. Blend with a mixer for 1-2 minutes or until smooth. Cover and place in the refrigerator for 1 hour.
Preheat oven to 350 degrees F and grease a 9×5” loaf pan.
(1.) In a small sauce pan, bring strawberries to a boil over low-medium heat. Cook for 2-3 minutes, stirring occasionally. Remove from heat and set aside. In a medium bowl, whisk together flour, baking soda, spices, baking powder, and salt and set aside. (2.) In a large bowl, cream together butter, sugar, and eggs until fluffy. (3.) Slowly add in flour mixture and water. (4.) Fold in strawberries and mix until all ingredients are combined.
Scrape batter into loaf pan and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean. Place on a cooling rack for 5 minutes. Remove bread from plan and let it finish cooling another 10 minutes on cooling rack.
Slice it up, spread the strawberry cream cheese on, and enjoy!
