Pita pizzas are my go-to when I’m pressed for time and not wanting to wait 2+ hours for homemade dough. I thought I would try out a sweet and savory combination to switch it up a bit and I think I found my new summer pizza! Fresh basil, sweet strawberries, and rich goat cheese get topped off with a simple balsamic reduction making this quick, easy, and delicious!

Ingredients:
1 cup balsamic vinegar
1 whole wheat pita
1 Tbs olive oil
2-3 large strawberries, hulled and thinly sliced
10-12 fresh basil leaves, finely chopped
2 Tbs crumbled goat cheese
Preheat oven to 400 degrees F.
In a small saucepan, heat the balsamic vinegar over high heat until it comes to a boil. Reduce heat until it comes to a simmer. Simmer for 15-18 minutes, stirring occasionally. Set aside and let it cool until ready to use.
Place pita bread on a cookie sheet or pizza pan. Brush the top and edges with olive oil. Top with sliced strawberries, basil, and goat cheese.
Bake for 6-8 minutes or until edges are a light golden brown. Top with balsamic reduction, slice it up, and serve!
P.S. No judgement if you skip the balsamic reduction part and just drizzle straight vinegar or a balsamic vinaigrette on instead!
