This cocktail is inspired by and dedicated to one of the funniest, most positive, inspiring gals I’ve had the pleasure of knowing and working alongside, Emma. Today is Emma’s 21st birthday (making me feel like a grandma) and now that she can legally taste test my cocktail creations, I had to create one just for her. She loves cookie inspired coffee drinks and after she came in with a Snickerdoodle latte, I made a mental note to recreate it for her, but with a boozy twist!
There’s no fancy coffee equipment needed to make this spiked latte, but be ready to get a little bit of an arm workout shaking this up to get that classic frothy latte foam. And don’t forget the garnish! You can’t make this without baking up a batch of Snickerdoodle cookies which are perfect for dipping into this warm winter cocktail. Spiked Snickerdoodle Latte
(makes 2 cocktails)
For rims:
1 tsp caramel sauce or honey
1 Tbs sugar
1 tsp ground cinnamon
Ingredients:
1oz vanilla vodka
1oz cinnamon vodka*
3oz heavy cream (you can also use whole milk or a non-dairy alternative)
2 tsp brown sugar
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1 cup of hot coffee
*You can actually make your own cinnamon vodka in just a few hours! Pour 1 cup of vodka into a canning jar. Add a cinnamon stick, shake, and then set aside to infuse for a few hours. For a stronger cinnamon flavor you can let it infuse overnight.
Run caramel sauce or honey around the rims of each glass. Mix sugar and cinnamon together on a small shallow dish. Dip the rims of each glass in the dish and swirl around to coat.
In a cocktail shaker or canning jar, combine vodkas, heavy cream, brown sugar, cinnamon, and nutmeg. Seal tight and then shake for 1-2 minutes or until mixture is frothy. Fill cups up about halfway with the hot coffee, then pour in vodka and cream mixture.
Garnish with a cookie and serve right away.
