Spiced Pork Chops with Cranberry Apple Chutney
Do you ever feel like the meals that take the most effort are usually the best? I sure do! This meal is honestly not that complicated.. unless you don’t check the expiration of the pork chops and have to run back to the store for fresh ones ANNNND almost chop your middle finger off while prepping the ingredients! Ingredients:
For the chutney:
1 Tbs butter
2 Golden Delicious apples, peeled, cored, and chopped into small chunks
¼ cup yellow onion, finely chopped
2 Tbs dried cranberries
1 ½ Tbs cider vinegar
1 Tbs brown sugar
1 tsp fresh ginger, peeled and minced
¼ tsp dry mustard
¼ tsp ground black pepper
A pinch of coarse salt
For pork chops:
2 large pork chops
¼ tsp garlic powder
¼ tsp chili powder
¼ tsp oregano
¼ tsp cayenne pepper
¼ tsp coarse salt
¼ tsp ground black pepper

Melt butter in a large skillet over medium heat. Add apple and onion and sauté for 4-5 minutes or until lightly browned.
Add remaining chutney ingredients, mix well with a wooden spoon, and bring to boil. Reduce heat and simmer 8-10 minutes or until apples are tender. Stir every few minutes.
Prepare pork chops while chutney simmers.
Heat a gas grill on medium heat or heat a large skillet over medium heat.
Place pork chops on a large plate. Combine seasoning in a small zip-lock bag and sprinkle on both sides of the pork chops.
Add pork to grill or pan and cook 5-7 minutes on each side or until no longer pink in the middle. Plate pork chops, top with apple chutney, and serve!
