I think the moment you realize you’re an adult is when you find yourself completely giddy about receiving a food processor for Christmas (thank you once again Mom!). One of the main reasons I even wanted one was just to make a basil pesto. Never-mind the fact that this food processor has a million and one different functions and items that it can make, I just wanted pesto! It’s simple but works with so many dishes and it’s a great way to use up the basil I planted that’s growing out of control! ; )
…..
Ingredients:
1-2 garlic cloves
1/3 cup walnuts or pine nuts
2 cups fresh basil leaves
½ cup olive oil
½ cup grated Parmesan cheese
Salt and freshly ground pepper to taste
(1.) Place garlic clove(s) in the food processor and pulse for 10 seconds or until minced. (2.) Add walnuts or pine nuts and fresh basil to processor. If using walnuts like I did, add them without the basil, process for 10-15 seconds and then add basil. (3.) Pulse for 10-15 seconds or until it becomes a thick paste. (4.) With the food processor running, slowly pour olive oil down the feeding tube and process until smooth.
Scrape down the sides (once the food processor is off of course!) with a rubber spatula. Add Parmesan cheese and pulse again until cheese is blended. Stir in salt and pepper and you’re finished!
Use for pasta, baguette slices, or even pizza!
Enjoy!
See how I used mine for a pizza!
