I feel that naturally my mind is always focused on the future and it became that way even more so when I began blogging. You have to anticipate trends, plan for upcoming holidays, and always have your content ready to go at the right moment. Of course that’s extremely frustrating when you work with seasonal ingredients.. for instance; peaches. So to say that I’ve waiting all winter and spring to make this cocktail is no exaggeration!
It’s very Southern-inspired, but instead of going for the obvious liquor of choice, bourbon, I reached for a favorite.. Sailor Jerry Rum. The spices and vanilla notes in the rum pair wonderfully with the sweetness of peaches and honey and crisp freshness from the mint and ginger beer. Just don’t be fooled by this sweet and pretty looking cocktail.. it still packs one hell of a punch in both flavor and potency. You’ll find yourself sipping on one or two of these on those particularly hot and humid summer evenings!

(makes 1 cocktail)
Ingredients:
Half of large peach, pit removed and cut into small cubes
15 fresh mint leaves + extra for garnish
1 1/2oz Sailor Jerry Rum
1 Tbs honey
Ice
4-6oz ginger beer

Add cut up peaches and mint leaves to a large glass. Using a muddler or wooden spoon, muddle and smash until you can smell the mint and there’s a bit of juice from the peaches.
Add rum and honey and stir until honey is dissolved.
Add a handful of ice and top with ginger beer.
Garnish and serve!
