Instead of fighting for the best view on a hill to watch the fireworks this past Fourth of July, we decided to stay right at home, watch our neighbors nearly blow their faces off, and enjoy some delicious grilled foods and spiked lemonade! One of the items on the menu.. chicken wings! I decided to bake these while my fiancé manned the grill with other items, but you could just as easily grill these too. Mixed herbs and spices are first rubbed on the chicken and then they’re baked to perfection.. crisp skin on the outside and tender and juicy on the inside. I then mixed up brown sugar, spices, and Sailor Jerry Rum to create a sweet, spicy, and savory glaze that you’ll find yourself wanting to drown all kinds of food in! It’s a good thing I photograph my food before trying it or else the only photos to show here would have been bones!

Ingredients:
Olive oil for pan
1 ½ lbs (14-16) wings
2 tsp paprika
1 tsp dried thyme
1 tsp onion powder
½ tsp garlic salt
½ freshly ground pepper
For glaze:
¾ cup Sailor Jerry Rum
½ cup brown sugar
1 Tbs chili powder
¼ tsp cayenne pepper
1 Tbs unsalted butter
Preheat oven to 400 degrees F (204 degrees C) and line a baking sheet with foil. Lightly drizzle olive oil across the pan. Arrange chicken wings on the pan and flip to coat evenly in the olive oil.
(1.) Mix paprika, thyme, onion powder, garlic salt, and pepper in a small bowl or dish. Sprinkle half of the mix over the chicken wings. Flip wings and sprinkle remaining spice mix over them. (2.) Place in the oven to bake for 5-7 minutes or until lightly browned on the bottom side. Flip wings and cook another 5-7 minutes or until thoroughly cooked. While waiting for the wings to cook, start on your glaze. (3.) In a medium saucepan combine rum, brown sugar, chili powder, and cayenne pepper. Bring to a boil over high heat and then reduce to medium heat and simmer for 10 minutes or until reduced by half. Stir every couple of minutes. (4.) Remove from heat, stir in butter, and transfer to a small dish.
By the time your glaze finishes up your chicken wings should be coming out of the oven. Baste wings with rum and brown sugar glaze.. feel free to smother them in the glaze.. seriously! Serve with a side of ranch or bleu cheese dressing or just enjoy them by themselves!

Follow up…. tried it with the smoker…. oh my lord, that’s TASTY!!!! I think you could use the glaze on donuts, too…. teehee.
