I’m not going to lie.. every time someone mentions beets I think of Dwight Shrute from The Office! I immediately want to yell out, “Bears. Beets. Battlestar Gallactica!” My obsession with The Office aside, I’ve actually really come to love juicing beets. If you’ve never tasted one, the flavor is very earthy, which is just a nice way of me saying they taste like dirt.. in a good way! I paired this beet juice with several other fruits and veggies to counteract that ‘earthy’ flavor while still getting all the natural benefits!

Ingredients:
1 beet leaves and all, scrubbed and outer skin peeled (I’ve found that when leaving that outer layer it makes the juice a little pulpy and gritty.)
1 red bell pepper, stem removed
1 red apple, cored
1 vine ripe tomato
2 stalks of celery
2 carrots
5-6 fresh strawberries, leaves removed
Add ingredients one by one into your juicer and juice into a large glass or pitcher. Stir and pour over ice. If you’re really not fond of the taste of beets, add the juice from half of a lemon and you won’t taste it at all!
