I typically use rosemary in a lot of recipes and cocktails throughout the winter, but never thought to incorporate it into my spring and summer dishes. Using a homemade rosemary simple syrup, I mixed up a a sweet and smooth Rosemary Lemonade Gin Fizz! The rosemary flavor is subtle, but provides an invigorating aromatic element to the drink. My favorite part of this is that you don’t have to make an entire pitcher of lemonade for just ONE, making this quick and simple when you need a thirst-quenching cocktail on a hot day.

(simple syrup will make enough for 4 cocktails)
Rosemary Simple Syrup:
1/2 cup sugar
1/2 cup water
1 sprig of rosemary
(makes 1 cocktail)
Cocktail Ingredients:
1 1/2 oz gin (or if you prefer vodka instead)
3/4 oz rosemary simple syrup
Juice from half a lemon
Ice
Club soda
Lemon slices and rosemary sprigs for garnish
Combine sugar, water, and a sprig of rosemary in a small saucepan over high heat. Bring mix to a boil and then remove from heat. Let mixture steep until cooled. Remove rosemary and transfer to a small canning jar or other sealing container. Store in the refrigerator until ready to use.
In a cocktail shaker, combine gin, rosemary simple syrup, and lemon juice. Vigorously shake for 10-15 seconds and strain into an ice filled glass.
Or if your cocktail strainer goes missing like mine did, you can get creative and use a fine mesh sieve! haha
Top with club soda, garnish, and serve!
