Here in the Pacific Northwest we’re blessed with pretty mild weather, so most houses and apartments don’t have air conditioning. Every summer though, we hit about one week where the temperatures are a little too much to handle and you find yourself sleeping in the bathtub with an ice pack on the back of your neck! To get prepared I’m stocking our freezer with ice cream and popsicles! So far my favorite has been Greek yogurt pops. Just three ingredients and no added sugar or mystery chemicals! An added bonus for parents: They don’t melt as quickly as the sugar water popsicles you get from the store so you’re not left with a sticky kid!

Ingredients:
1 ½ cups Greek vanilla yogurt
½ cup fresh blueberries
½ cup (4-5) fresh strawberries, hulled and sliced
Mash blueberries in a small bowl with ½ cup Greek yogurt. In a separate small bowl, mash strawberries with ½ cup Greek yogurt. The more you mash the richer the color will be, giving you that fun red, white, and blue look.
Add a few spoonfuls of the strawberry yogurt to your popsicle molds, followed by a few spoonfuls of the remaining ½ cup of plain Greek yogurt, and then fill remaining area with blueberry yogurt. Add sticks and place in the freezer overnight.
When ready to serve, run hot water on the bottom portion of the mold to loosen popsicles. Carefully twist to remove the yogurt pops. Serve right away.
