Portland is holding true to its rainy reputation this week and as much as I love a little gloom and doom, I’m really longing for some warm sunny days and strong tiki drinks! Since the forecast shows no sign of these spring showers stopping, I decided to kick off the weekend with a Sailor Jerry original recipe for a Queens Park Swizzle! The perfect blend of strong, sweet, and sour that instantly makes you think of summer!

Recipe adapted from Sailor Jerry
Ingredients:
2oz Sailor Jerry Rum
Juice from 1 lime
½ oz simple syrup (recipe and instructions below)
6-8 mint leaves, torn
2 dashes Angostura bitters
To make homemade simple syrup:
1 cup water
1 cup sugar
Add water and sugar to a small sauce pan and bring to a boil. Reduce heat to low and cook for 3-4 minutes or until sugar is completely dissolved.
Let the syrup cool, pour into a sealable container, and store in the refrigerator until ready to use.
Add all ingredients to tall glass and fill with crushed ice.
Stir or ‘swizzle’ (place a swizzle stick between your palms and run your hands back and forth) until glass is slightly frosted. Garnish with a mint sprig (and of course a drink umbrella) and one more dash of bitters. Serve right away!
