Do you ever have those days where you just don’t want to be bothered to put pants on and go to the store? Is that day every day? You’re in good company! On one such occassion I was craving a smoothie and decided to work with what I had on hand for the sake of staying pants and makeup free. I had just baked pumpkin bread and still had plenty of pumpkin puree, a good amount of vanilla Greek yogurt, and frozen bananas. I threw in some spices and topped the whole thing off with a good amount of whipped cream and crumbled graham crackers to make the most delicious fall flavored breakfast smoothie!
…..
(makes 1 large or 2 medium sized smoothies)
Ingredients:
1 cup vanilla Greek yogurt
1/2 cup pumpkin puree (not pumpkin pie filling)
1 banana, cut into disks and frozen the night before
1 Tbs honey
1 tsp ground cinnamon
1 tsp pumpkin pie spice
1 tsp Chia seeds (optional)
Whipped cream (optional)
Crumbled graham crackers (optional)
Combine all ingredients except whipped cream and graham crackers in a blender or food processor. Puree until completely smooth. Distribute into glasses, top with whipped cream and crumbled graham crackers, and serve.

I love how shamelessly you write “whipped cream” and “breakfast” in the same sentence. Looks great!

Looks like a meal that would hold you over way past lunch. Looks great and most of us probably do have those things on hand. Yum!
