Pumpkin Bread
My old roommate and I used to consume a ridiculous amount of pumpkin bread from Starbuck’s during the work week, but when it started the break the bank I decided to make my own! The result ended up being far more delicious and affordable!

Makes 2 loaves or 24 muffins.
Ingredients:
3 cups sugar
1 cup unsalted butter
4 eggs
3 ½ cups flour
2 tsp baking soda
½ tsp baking powder
1 ½ tsp salt
4 tsp ground ginger
1 tsp cinnamon
1 tsp nutmeg
1 tsp pumpkin pie spice
½ tsp ground cloves
2 cups of pureed pumpkin
2/3 cup of water
Preheat oven to 350 degrees F and grease two loaf pans (9×5) or muffin tins.
(1.) In a medium sized bowl, cream together sugar, butter, and eggs. (2.) In a separate large bowl, whisk together all dry ingredients and spices. (3.) Add butter and sugar mixture and pumpkin puree to dry ingredients. Slowly mix in water. Mix for 2-3 minutes or until smooth. (4.) Divide batter into greased loaf pans or muffin tins and bake for 50-55 minutes (25-30 for muffins) or until a toothpick inserted into the center comes out clean.
Remove from oven and place on a cooling rack for 10 minutes. Pop loaf out of the pan and let it finish cooling another 5-10 minutes on the cooling rack.
Slice it up and enjoy!
