Every holiday season I look forward to making Hot Apple Jerrys to enjoy with friends and family after our big Thanksgiving and Christmas meals. This year I was craving a bit of a twist on my classic and made a big batch of Spiced Slow Cooker Pear Cider to use instead. In addition to the cider and rum I added a splash of sparkling pomegranate juice, an orange wedge, and pomegranate seeds. Stir it all together with a cinnamon stick and you’ve got yourself a fine cup of spiked cider!
(makes 1 cocktail)
Ingredients:
1 orange wedge
1oz Sailor Jerry Rum
1oz sparkling pomegranate juice, room temperature
2-3oz pear cider*
1 cinnamon stick
5-6 pomegranate seeds
*Follow my recipe for Spiced Slow Cooker Pear Cider or if you’re in a rush you can use pear juice, a dash of cinnamon and ground cloves.
Squeeze the orange wedge into a mug or Irish coffee glass and toss the wedge in when done. Add rum and sparkling pomegranate juice.
If your pear cider is refrigerated or room temperature, heat it up in a saucepan on the stove or microwave it for a minute or two or until piping hot. Add to the glass and give it a stir with a cinnamon stick. Add pomegranate seeds for garnish and serve right away.
If you’re making a large batch ahead of time, mix everything together except the rum. Cover and refrigerate. When you’re ready to use, heat mixture back up in a large saucepan or crockpot until hot. Pour into glasses filling about 2/3 of the way full, add a shot of rum, stir, and serve.
