Throughout 2016 there were times where I could barely keep up with the days and at other times it felt like this year would just never end. We’ve finally made it through though and whether you’re celebrating the phenomenal year you just had or looking forward to starting anew with 2017, I’ve got a delicious Pomegranate Citrus Champagne Cocktail for you to toast with! Fresh squeezed orange juice and pomegranate seeds add a sweet and citrusy twist, while sparkling pomegranate juice and champagne add extra fizz for a truly bubbly New Year’s Eve concoction. Cheers to a new year!
Pomegranate Citrus Champagne Cocktail
(makes 2 cocktails)
Ingredients:
3oz vodka
6oz Izze Pomegranate Juice
Juice from 1 orange
Champagne, chilled
Pomegranate seeds and orange slices for garnish
Getting the seeds out of a pomegranate can be a little tricky (and messy) so there’s a few tips on getting them out easier. First, roll the fruit to loosen the seeds. Next, cut around the middle and pull apart the two halves. Hold the halves over a bowl and lightly tap to knock the seeds out. Annnnd if all else fails, you can always be a little cheater and buy the containers of pomegranate seeds. No judgment here!
Combine vodka, sparkling pomegranate juice, and fresh squeezed orange juice into a large glass or cocktail shaker. Gently stir and distribute evenly into two glasses. Top them off with champagne, garnish, and then serve.
