This is one of those breakfast recipes that looks like a ton of effort went into it, but it’s shockingly easy. The Roasted Red Pepper Sauce I made a few days before, the potatoes and onion were chopped up the night before while I was cooking dinner, and the entire dish is made in just ONE skillet making clean-up and serving incredibly simple. The dish itself contains all of the my favorite breakfast ingredients.. perfectly crisp potatoes, chunks of bacon, tangy goat cheese, rich egg yolks, and finished off with a sweet and smoky red pepper sauce!
One Skillet Potato Hash with Red Pepper Sauce
(makes 4-6 servings)
Ingredients:
1/2lb of bacon (feel free to cook the whole pound if you love bacon!)
6-7 medium Yukon Gold Potatoes, scrubbed and cut into cubes
1 medium yellow onion, diced
Salt and pepper
4oz crumbled goat cheese
3 to 4 eggs
1/4 cup Roasted Red Pepper Chipotle Sauce – Get the recipe here
1 to 2 Tbs of fresh chopped parsley
In a large cast iron skillet, cook bacon over low to medium heat until almost crisp. Transfer pieces to a paper towel lined plate and let cool. Drain out most of the bacon grease reserving about 1 to 2 tablespoon in the skillet. Using the same heat setting, cook potatoes and onion for 8 to 10 minutes or until potatoes are lightly browned and the onions are translucent. Season with salt and pepper. While you’re waiting for those to cook you can chop or tear the bacon into small pieces.
In the last 5 minutes of waiting for the potatoes and onion to cook, turn your oven to 400 degrees F. When they’re finished cooking, stir in the bacon chunks, and create dents for the eggs. Crack your eggs into the dents you made, add crumbled goat cheese, and pop the whole thing in the oven.

Bake for 8 to 10 minutes or until the whites of the eggs are set up and no longer runny.
Remove from the oven, drizzle red pepper sauce across the top and add fresh parsley if you like. Use a spatula to transfer portions to plates or bowls and serve right away!
