I have a love/hate relationship with salads. A really great hearty salad can be satisfying, but after eating so many of them you finally hit that point. The point where your inner carnivore screams, “I’m not a rabbit! I need bacon.. and steak!” But after making this blackberry vinaigrette I’m finding myself back on the ‘love’ side of salads. The dressing is sweet, tangy, and fresh.. taking a regular salad to an entirely new level! And don’t worry.. you can still throw in some chicken and bacon to satisfy that inner carnivore! 😉

(makes a little over 1 cup of dressing)
Ingredients:
1 garlic clove
1 cup fresh blackberries
¼ cup balsamic vinegar
1 Tbs honey
1 tsp Dijon mustard
Salt and pepper to taste
½ cup olive oil
Mixed greens
Red onion slices
Slivered almonds
Extra blackberries
Save yourself some chopping and place the garlic clove in a food processor or blender and puree until minced. Add blackberries, vinegar, honey, mustard, salt, and pepper.
Puree until smooth. Scrape down the sides and lid of the processor. Puree once more, but while processor is running, slowly pour olive oil down the feed tube and process for 30 seconds. When completely mixed, pour mixture into a sealing jar or container. Store in the refrigerator until ready to use.
Drizzle over mixed greens, top with onion, almonds, extra blackberries, and any other toppings you desire. Serve right away.
