I feel like I just committed a sin by even stringing those four words together.. to consume it is even better! My parents are visiting this week and today is my step-dad’s birthday! I know the Sweet Tooth Sunday posts are always anticipated, so thank you for waiting an extra day so I could make these amazing cupcakes for his birthday! Typically I like to describe the taste and aroma of the recipe, but do I really need to with these?! All you need to know is that they are LIFE CHANGING!

(makes 12 cupcakes)
Ingredients:
10 whole graham crackers, ground in food processor
½ cup all-purpose flour
2 ½ tsp baking powder
¼ tsp salt
½ cup (1 stick) unsalted butter, softened
¾ cup sugar
2 eggs
½ tsp vanilla extract
¾ cup milk
8-10 Hershey’s Dark Chocolate pieces, broken into small chunks
6 whole graham crackers, ground in food processor
12 large marshmallows
6 strips of thick cut bacon, cut in half;
4 Tbs maple syrup
Preheat oven to 350 degrees F (176 degrees C) and line a 12 cup muffin tin with paper cupcakes liners.
(1.) Grind up graham crackers until they become fine crumbs. (2.) In a large bowl, stir together ground graham crackers, flour, baking powder and salt. (3.) In a separate large bowl beat together butter and sugar until fluffy. (4.) Beat in eggs one at a time and then finally the vanilla.
(5.) Alternate pouring in the flour mixture and milk until completely incorporated. (6.) Using a rubber spatula, fold in chocolate chunks. (7.) Distribute remaining 6 ground graham crackers into the bottom of the cupcake liners. (8.) Distribute batter evenly among cups and place in the oven.
(9.) Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean. Remove cupcakes and place oven on broiler setting (500-525 degrees F). (10.) Add a marshmallow to the top of every cupcake and place back in the oven for 3-5 minutes or until marshmallow starts to melt. (11.) Remove from the oven and use the back of a spoon to press down and spread marshmallow over the top of the cupcake. Put back in under the broiler for another minute. (12.) Remove and stick graham cracker into the center of the cupcake. Let cool for 5 to 10 minutes. Pop out of the muffin tin and place on a cooling rack until ready to add the bacon.
While waiting on the cupcakes to bake you can cook the bacon!
Place pieces of bacon into a skillet and cook over medium heat. Add 2 Tbs of maple syrup and cook for 4-5 minutes on each side. Flip pieces, add remaining 2 Tbs of maple syrup, and finish cooking until done. Place bacon on a plate (no paper towels or it will stick!) and let cool for a few minutes. When cool enough to touch, place bacon on top of cupcakes and serve!
He was less than thrilled to be put on the spot! 🙂
