Low-Fat Pumpkin Spice French Toast Muffins
Before we left for Iowa this month, we cleared out the fridge and pantry, leaving us with just beer and pasta to eat. There’s definitely nothing wrong with that, but I really wanted to make French toast one morning! Not even having bread left, I decided to make muffins, but gave them a fall spin by adding pumpkin spice to the mix!

(Makes 12 muffins)
Ingredients:
1 ½ cup all-purpose flour
¼ cup Stevia (sugar substitute)
¼ cup sugar
1 ½ tsp baking powder
½ tsp salt
½ tsp pumpkin pie spice
¼ tsp nutmeg
¼ tsp cinnamon
½ cup milk
1/3 cup melted butter or margarine
1 egg

Preheat oven to 350 degrees F and grease a muffin pan.
In a large bowl, whisk together all dry ingredients.
In a smaller bowl whisk together melted butter, milk, and egg.
Combine egg mixture to bowl of dry ingredients and stir until mixed well. The batter should still look a bit lumpy.
Spoon batter into muffin cups evenly, pop into the oven and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Let muffins cool for about 10 minutes.
Top with butter, sugar-free syrup, and sprinkle a little extra pumpkin spice or cinnamon on top!
