Lemon Pepper Salmon with Garlic Mushroom Sauce
I love cooking salmon, but I’m always looking for different ways to cook, season, or change it. The latest way is with this amazing garlic mushroom sauce! It’s zesty and hearty and would go great with chicken or steak as well!
…..
Ingredients:
2 fresh salmon fillets, skinned
1 Tbs soy sauce
1 Tbs lemon juice
Cracked black pepper to taste
Garlic Mushroom Sauce
4 Tbs unsalted butter
3 garlic cloves, minced
1 cup cremini mushrooms, sliced
4-5 green onions, cut into 2-inch lengths
½ cup dry white wine
½ cup chicken broth
1 tsp flour
Coarse salt and pepper to taste
Preheat oven to broiler setting, cover a rimmed baking sheet with foil, and lightly coat with olive oil.
- During the last minutes of cook time for the sauce, you’ll put the fillets in the oven so everything will be done at the same time.
Place salmon fillets, soy sauce, lemon juice, and pepper in zip-lock bags. Shake so fillets are evenly coated and place in the refrigerator to marinate for an hour.
(1.) In a deep skillet, melt butter over medium heat, add minced garlic and cook for 1-2 minutes. Add sliced mushrooms and sauté for about 5 minutes. (2.) Stir in green onion and cook another 5 minutes. (3.) Add white wine and bring to a boil for 1 minute. (4.) Pour in stock or broth and bring to a boil. Stir in flour. Season with salt and pepper. Let sauce simmer for about 5-7 minutes, stirring occasionally.
Remove salmon filets from zip-lock bags and place on prepared baking sheet. Broil for 5-7 minutes or until edges just start to crisp.
Spoon sauce onto a plate, place salmon on top, and serve!
Enjoy!
