Kale and Green Apple Salad with Zesty Strawberry Vinaigrette
I used to loathe salads..or anything healthy for that matter, but we acquired a juicer several months ago and I love it! We’ve only used it for juicing so far, but I decided I wanted to get more use out of it. I found a simple recipe for using strawberry juice, a bit of the pulp, and balsamic vinegar to make a vinaigrette dressing and I had to try it! I added a few more ingredients to really give it some flavor and it’s my new favorite salad dressing! Ingredients for dressing:
1 cup of fresh strawberry juice (about 12-15 large strawberries)
1 Tbs strawberry pulp
¼ cup balsamic vinegar
¼ cup olive oil
1 Tbs Dijon mustard
1 tsp honey
1 garlic clove, minced
½ tsp fresh ground pepper
¼ tsp salt
For salad: (for one bowl)
1 ½ cups fresh kale, rinsed and cut or torn into small chunks
¼ cup green apple, chopped into cubes
3-4 grape tomatoes, halved
2 strawberries, sliced
Goat cheese or Feta to sprinkle on top
The strawberry juice looks and tastes amazing.. the pulp however, does not look so amazing! haha
Combine all ingredients for dressing in a large sealing jar and shake until well mixed.
Place in the refrigerator to chill for 20 minutes before using. You can store for up to two weeks!
Add your salad ingredients in a bowl, pour dressing over the top, and enjoy!
Who said healthy can’t be delicious too?!
