Ever since I received a food processor for Christmas (thanks Momma Goose!!), I have been dying to make some homemade hummus! I figured on my first attempt it may not come out right or it would taste weird, but I was dead wrong! Making hummus is incredibly easy! The cilantro and jalapeño complement each other perfectly and I have to say, this is better than any hummus I’ve had in a restaurant!
……
Ingredients:
2 cloves of garlic
Two 15 oz cans of garbanzo beans, drained
Juice from two small limes
½ tsp salt
½ tsp cayenne pepper
½ cup olive oil
1 cup fresh chopped cilantro
2 jalapeños, ribbed, seeded, and minced
Pita bread or pita chips
For extra smooth hummus, remove the skin from the garbanzo beans before processing. (1.) Just pinch the bean between your thumb and index finger and (2.) the casing should slide right off. (3.) Set the beans in a separate bowl and (4.) discard the skins. It takes maybe 20-30 minutes, but the extra work pays off for amazingly smooth restaurant style hummus!
(5.) Place garlic in the food processor and process until minced. Add beans, lime juice, salt, and cayenne pepper. (6.) Process into a puree. Scrape down the sides and puree for another 10 seconds. (7.) With the food processor running, slowly pour olive oil down the feed tube. Process for a few minutes or until mixture thickens. (8.) Add cilantro and jalapeño and pulse another 10-15 seconds.
Serve right away or store in an airtight container and refrigerate. Bring hummus back to room temperature before serving.
Enjoy!
