Italian Turkey Meatballs
Sometimes you just want good old fashioned comfort food! Spaghetti and meatballs is a favorite of mine and I adapted this meatball recipe from the woman who makes the best ones, my mother! We’re trying to eat a bit healthier so I decided to use ground turkey instead of ground beef. The result: Just as delicious!

(makes 25-30)
Ingredients:
4 slices whole wheat bread
½ cup water
2 eggs
1lb ground turkey
¼ cup grated Parmesan cheese
2 Tbs Italian seasoning
2 garlic cloves, minced
Salt and pepper to taste
(I add a dash of crushed red pepper flakes as well!)
2 Tbs olive oil
2 cups spaghetti sauce – try my 5 minute red sauce!
(1.) Place bread slices in a large bowl and pour water over them. Let bread absorb water for 2-3 minutes. (2.) Next add eggs and chop up/mash bread. This is going to look pretty gross (like chewed bread!), but it’s all a part of the process! (3.) Mix in ground turkey, Parmesan cheese, Italian seasoning, garlic, salt and pepper. (4.) With wet hands, form mixture into small balls. Mixture will make 25-30 meatballs.
(5.) Heat olive oil in a large skillet over medium heat. When hot add meatballs. Cook for 2-3 minutes on each side or until cooked all the way through. (6.) Cut one in half to make sure they’re thoroughly cooked. (7.) Add sauce and reduce heat to low and simmer for another 5 minutes, stirring occasionally. (8.) If you’re not cooking the entire batch, you can freeze the remaining mixture and defrost at a later date.
Serve over a heaping pile of pasta and enjoy!

I find not putting breadcrumbs and egg in my meatballs makes them so much tastier! Just mix thoroughly with your hands. The warmth and friction helps the proteins bind eliminating the need for added binders. Just a wee tip!
