It’s grilling season and I’m taking full advantage of it! I don’t know if it’s the sizzle of food hitting the grill or the fact that everything just seems to taste better when cooked on a grill, but if you need an excuse, these shrimp skewers are definitely it! After marinating the shrimp in fresh lime juice I smothered them with honey barbecue sauce on the grill, creating a sweet and savory flavor that will make you wish you cooked more!

Ingredients:
1lb uncooked shrimp, tail and skin removed
2 Tbs soy sauce
Juice from 1 lime
Salt and freshly ground black pepper to taste
2-3 small limes cut into wedges
5-6 Tbs Sweet Baby Ray’s Honey BBQ Sauce
Wooden skewers
Soak wooden skewers in water for 20-30 minutes before using to prevent them burning on the grill.
Place shrimp into a large zip-lock bag and add soy sauce, lime juice, salt, and pepper. Shake to evenly coat the shrimp and place in the refrigerator to marinate for 30 minutes. When finished marinating, skewer shrimp and lime wedges, placing a lime wedge in every few shrimp. Squeeze the juice out of any remaining lime wedges over the top of the shrimp. (we didn’t cook the entire pound of shrimp so you’ll have more than just 6 skewers)
Turn your grill to a low-medium setting and place skewers on when hot.
Cook for 1-2 minutes or until lightly pink and then flip. Cook another 1-2 minutes.
Brush shrimp barbecue sauce and flip again. Brush the other side of the shrimp and cook an additional minute.
When thoroughly cooked remove from the grill and plate it! We enjoyed ours with Mango Habanero Coleslaw!
