I love making tacos and fajitas at home, but I really wanted to kick it up a notch by making my tortillas as well. I was surprised at how simple they were to make and they taste so much better than store-bought!

Ingredients
1 cup whole wheat flour
1 cup all-purpose flour
2 tsp olive oil
1 ½ tsp of baking powder
1 tsp salt
¾ cup warm milk

(1.) In a large bowl mix together flour, baking powder, salt, and oil. (2.) Slowly stir in warm milk and mix until a loose ball of dough is formed. (3.) Add a bit more milk if needed. (4.) Knead for a few minutes on a floured surface until dough is smooth, but still elastic. Place dough back in bowl and cover with a towel for 20 minutes.
(5.) After dough has rested, break off into eight sections and roll into balls. Place them on a large plate, not touching, and cover with plastic wrap for another 10 minutes. (6.) Next knead a dough ball out a few inches, (7.) and then roll out with a rolling pin until thin and about eight inches in diameter. Keep rolled out tortillas covered on a plate until ready to cook. (8.) Heat a dry skillet on high, add tortilla, and cook about 30 seconds on each side. It should start to bubble and puff up a bit when it’s ready to be flipped.
Put cooked tortillas on a plate, cover with a paper towel, and place in microwave until ready to eat.
