Hearty Jalapeño Chili
For about 3 days in a row, Josh and I were consuming nothing but chili. We couldn’t help it though! It was too delicious and filling to resist! Although going on an all-chili diet is probably not the healthiest, you don’t have to feel too guilty with this recipe. I used ground beef AND ground turkey to make it a bit leaner without losing good flavor.
Ingredients:
1lb ground beef
1lb ground turkey
3 jalapeños, finely chopped
1 red onion, finely chopped
6-7 garlic cloves, minced
2 Tbs chili powder
2 tsp cumin
1 tsp crushed red pepper
1 tsp cayenne pepper
½ tsp oregano
½ tsp garlic powder
Juice from 1 lime
15 oz can of tomato sauce
12 oz can or bottle of beer (Blue Moon is my favorite!)
Three 15 oz cans of red kidney beans (drained)
¼ cup fresh cilantro, finely chopped
(1.) In a large pot on low to medium heat, cook ground beef and turkey until browned. Add jalapeños, onion, and garlic and cook for 5 minutes. (2.) Stir in spices and lime juice and cook for another 2-3 minutes. (3.) Add tomato sauce and beer and bring to a boil. Reduce heat to a low setting, cover, and simmer for 10-12 minutes. (4.) Mash one can of beans and stir all 3 cans into the chili. Cover and simmer for another 5-10 minutes.
Remove from heat and stir in cilantro.
Serve with tortilla chips and honey cornbread muffins!
