When September hits, we all lose our minds over Halloween decorations, scary movie marathons, and of course PUMPKIN SPICE EVERYTHING. I fall into the hysteria just as much as the next person, but where I really go ham on pumpkin flavored goods is in the beer aisle. I love trying all the new pumpkin ales and Octoberfest beers that hit the shelves this time of year and finding new favorites, ways to bake or cook with them in fall recipes, and of course.. creating deliciously strong cocktails out of them!
This Harvest Pumpkin Beer Cocktail is simple, but offers a strong kick of spiced rum. The vanilla and caramel notes in the rum blend seamlessly with the pumpkin and spices brewed into the beer. Add a sugar and spice rim for a little sweetness and you’ve got yourself the perfect drink to celebrate the beginning of fall!
(makes 1 cocktail)
Harvest Pumpkin Beer Cocktail:
1 tsp sugar
1/4 tsp pumpkin pie spice
1oz Sailor Jerry Rum
1 (12oz) bottle of your favorite pumpkin beer (I like Blue Moon’s)
Ice
Cinnamon stick for garnish (optional)
On a small plate, combine sugar and pumpkin pie spice until mixed. Dip the edge of a large glass in water or run a small dab of honey around the rim. Dip the rim into the sugar and spice mix until edges are completely coated.
Fill the glass with ice and add the shot of rum.
Slowly pour in the beer, give it a light stir, garnish, and serve!
