Halloween Cocoa Cupcakes
Even though Halloween is a month out, I wanted to bake some Halloween themed cupcakes today. You can use these for any occasion but I threw a twist to mine with some Halloween accessories! I’ve never been a fan of super rich cupcakes so if that’s what you’re looking for, you might want to throw a handful of chocolate chips into your batter, but if you like a more subtle cocoa flavor..these are perfect for you!

Ingredients:
½ cup sugar
½ cup Stevia (sugar substitute)
2 eggs (room temperature)
1 stick of unsalted butter (room temperature)
2 cups flour
¼ cup unsweetened cocoa
2 tsp baking powder
½ tsp salt
1 cup skim milk
1 ½ tsp vanilla extract
Additional items:
Halloween toothpicks, plastic skeleton hands, etc.

Preheat oven to 350 degrees and grease a muffin tin or fill with paper or foil liners.
In a large bowl, cream together butter, sugar, and eggs.
Slowly mix in salt, baking powder, cocoa, flour, milk, and vanilla extract. It should have a pudding-like texture and look.
Distribute batter evenly among cupcake tins and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes. I like to sprinkle a little extra cocoa on top for a “dirt” look once the cupcakes are done.
Insert Halloween accessories and serve!
