Summer eating for me means a lot of fresh fruit, grilling, and of course.. ice cream! I decided to combine those three with grilled peach sundaes topped with candied walnuts. The warm juicy peaches, vanilla ice cream, and crunch from the candied walnuts make this the perfect summer dessert!

(makes 2 sundaes)
Ingredients:
2 medium white peaches, pit removed and cut into slices
1-2 tsp brown sugar
A pinch of cinnamon (optional)
1 quart vanilla ice cream
For candied walnuts:
1 cup walnut halves
½ cup brown sugar
Pour out a bit of olive oil onto a paper towel and rub grill top. You can also use non-stick cooking spray. Heat grill on low-medium heat setting. When grill is hot, place peaches, one of the cut sides down, onto the grill.
Cook for 2-3 minutes and then flip to the other edge. Cook another 2-3 minutes or until peaches are tender.
Place peaches on a plate, skin side down, and sprinkle with brown sugar and cinnamon.
When peaches have cooled enough to touch, carefully peel the skin from the wedges and place back on the plate to finish cooling.
Line a baking sheet with parchment paper or foil and set aside. Combine walnuts and brown sugar in a medium sauce pan and heat over medium heat. Once the brown sugar starts to melt, stir frequently with a wooden spoon to coat the walnuts evenly.
Cook for 3-5 minutes or until all of the sugar has melted and walnuts are thoroughly coated. Remove from heat and spread out on prepared baking sheet. Break up any large clumps and set aside to dry.
Distribute peaches between two bowl or sundae cups, reserving a few to place on top. Add several scoops of ice cream, add remaining peaches, and top with candied walnuts!
