Like any recipe or project, you always set out with the best intentions, think your ingredients through, and follow the proper steps. Then somewhere along the way, something goes terribly wrong and you wind up with curdled milk mojitos instead of a nice refreshing summer cocktail. Here’s how my disaster drink unfolded..
I thought I would use coconut milk instead of cream of coconut to make my drink a little healthier, but still keep the coconut flavor. That was probably mistake number one. I muddled mint, raspberries, lime juice, and a bit of sugar and then poured in the shot of milk. I noticed the mixture was looking a little odd, but proceeded with the last step.
I was supposed to add club soda, except I forgot the club soda, so I added champagne instead. This was probably mistake number 2.
Did you ever make one of those baking soda and vinegar volcanoes as a kid for science class? If you have, then you understand the kind of chemical reaction I’m referring to. As soon as that champagne hit the rest of my cocktail mix it bubbled over so quickly that half of the serving tray was covered. I figured I had maybe just added too much and grabbed a paper towel to soak up what spilled over.
After it settled for a bit I was left with these odd sea foam-like bubbles sitting on the top which weren’t extremely appealing. Next thought was that if I just threw some garnishes on top it would distract from the coagulated looking foam and it would all be okay.. NOPE! What’s that old saying? Oh yes.. “You can’t polish a turd!” It still tasted okay, but was not the coconut-y raspberry flavor I was hoping for and it was so gross looking, I wouldn’t dare try to serve this to anyone.. that I liked anyway. Perhaps I’ll remember this kind of a combination for a creepy Halloween inspired drink, but this is not the beautiful refreshing beverage I wanted or needed.
