It’s been unusually cold here in Portland over the last few days, so to warm up I’ve put together a spicy batch of fresh salsa! It’s always a crowd favorite and I usually have to double the batch. Whether you’re solo or snowed in with the whole family, this is the perfect spicy snack to whip up on those chilly days!

I typically avoid using an electric food processor for this because it purees it too much, but you can use a manual food processor or finely chop the veggies by hand.
Ingredients:
2 medium tomatoes
½ of a small white onion
1 jalapeno (remove ribs and seeds for a milder taste)
¼ finely chopped cilantro or parsley
1 garlic clove, minced
½ Tbs garlic salt
Juice from half a lemon
Juice from half a lime
Process or chop the vegetables to your liking. Stir in minced garlic, garlic salt, lemon, and lime juice.
Serve with tortilla chips! This can also be made the night before and kept in the refrigerator for up to a week.
