I know, I know.. I just did banana bread muffins last weekend, but anything involving candied bacon completely changes the game! To honor Elvis Presley’s memory (his passing was August 16th, 1977), I thought I would bake a dish fit for The King himself! Whole wheat banana bread, slathered with creamy peanut butter, and topped with a tower of candied bacon! The flavors work perfectly with one another and you can’t help but sing a little Elvis while you’re enjoying it! ; )

Ingredients:
3-4 ripe bananas, mashed with a fork
½ cup unsalted butter, softened
¾ cup sugar
1/3 cup milk
2 large eggs
2 tsp vanilla
1 cup all-purpose flour
1 cup whole-wheat flour
1 tsp baking soda
½ tsp salt
1lb bacon
3-4 Tbs brown sugar
Creamy peanut butter
Preheat oven to 350 degrees F and grease a 9×5” loaf pan or 9” round cake pan (at least 1 inch deep).
(1.) In a large bowl, mix bananas, butter, sugar, milk, eggs, and vanilla until smooth. (2.) In a separate bowl, whisk together flour, baking soda, and salt. (3.) Slowly add dry ingredients to banana mixture and beat until smooth. (4.) Pour batter into prepared baking pan. Bake for 25-30 minutes if using a round cake pan and 50-55 minutes if using a 9×5” loaf pan. Bread will be done when a toothpick inserted into the center comes out clean.
(5.) Place on a cooling rack for 5 minutes. (6.) Pop bread out of pan and set it on cooling rack to finish cooling down for another 10 minutes. (7.) While waiting on the bread to bake you can make your candied bacon. Heat a large skillet over medium heat and add several strips of bacon when hot. Sprinkle with brown sugar and flip after cooking for 3-4 minutes. Sprinkle other side with brown sugar and cook for 3-4 more minutes. (8.) Place cooked bacon on a plate to cool down. DO NOT set them on a paper towel.. I made this mistake long ago and wound up with disgusting paper towel covered bacon!
Slice up banana bread once cooled. Spread peanut butter on and top with bacon. Serve right away!
