If there ever was the perfect hot summer day cocktail.. this is it! It’s crisp, refreshing, light, and embodies the flavors of summer! The recipe makes a big batch so it’s perfect for summer parties and BBQ’s. You can also make these without alcohol for your non-drinking guests! : )

(makes 6-8 cocktails)
Ingredients:
2 cups watermelon cubes
1 large cucumber, peeled, ends cut off, and cut into chunks
Juice from 1 lime
1 Tbs honey
Ice
6-8oz vodka (or gin if you prefer)
Club soda
Cucumber slices and fresh mint for garnish
(1.) Place watermelon cubes in a blender or food processor and puree until turned to liquid. (2.) Pour through a fine mesh strainer over a bowl or pitcher. Press on the solids to get as much liquid as possible. Discard solids. (3.) Add cucumber chunks to food processor and puree until liquid. (4.) Pour through strainer over the bowl, once again pressing on the solids to get liquid through. Discard cucumber pulp.
In a small glass or measuring cup, stir together lime juice and honey. Pour into bowl or pitcher of watermelon and cucumber juice and stir until mixed.
To make a non-alcoholic spritzer, add 3oz (3 shots) of the cucumber watermelon mixture into a glass filled with ice. Top with club soda (about another 2-3oz), garnish, and serve.
To make the alcoholic version, add 2oz (2 shots) of the cucumber watermelon mixture into a glass filled with ice. Add 1oz of vodka and stir. Top with club soda, garnish, and serve.

This drink was great! Unfortunately my watermelon wasn’t very sweet but everyone still loved it and I could imagine how much better it would be with a better watermelon.
