Whenever I tell someone that I’m cooking quinoa the response I get back is usually, “Keen-what?!” If you’re unfamiliar with this super seed, quinoa is much like rice, but with more fiber, protein, and vitamins. You won’t be left with that bloated feeling that rice gives you after eating either. I adapted my cilantro and lime rice recipe using quinoa instead and it’s now my go-to side dish for chicken, fish, and burritos. See for yourself how quick, healthy, and tasty quinoa can be!

Ingredients:
1 cup uncooked quinoa, rinsed
2 cups chicken or vegetable stock (you can use water but the veggie and chicken stocks give it more flavor)
1 tsp salt
Zest from 1 lime
Juice from 2 limes
¼ cup fresh cilantro, finely chopped

In a large saucepan combine quinoa and chicken stock.
Bring to a boil, reduce heat to low and cover. Simmer for 12-15 minutes, stirring occasionally. Once quinoa absorbs all of the stock, remove from heat.
Stir in salt, lime zest, juice, and cilantro until mixed. Serve right away!
