I love going to movies, but sometimes it’s just nice to stay in, make some snacks, and enjoy the film, sans chatty teenagers and the sticky floors. If you’re planning a night-in, I’ve put together the perfect movie snack for you. A combination of salty, sweet, and ridiculously addicting! I’m not kidding! Before I even had the caramel corn in the oven I had snacked on nearly a third of it! Whether you just rented The Wolf of Wall Street or you’re settling in for a 6 hour Game of Thrones marathon (guilty!), whip up this easy treat and enjoy!
…..
Ingredients:
4 cups of popped popcorn (roughly what a 3oz bag of microwave popcorn will yield)
Coarsely ground sea salt
½ cup sugar
1 ½ Tbs water
¼ cup heavy cream
1 tsp vanilla extract
½ cup dark chocolate chips
Sprinkles (optional)
Transfer popped popcorn to a large bowl, season with sea salt, and set aside.
Preheat oven to 200 degrees F (93 degrees C).
Combine sugar and water in a small sauce pan and bring to a boil. Do not stir! When mixture becomes a dark amber color, remove from heat and stir in cream until mixed. Stir in vanilla extract. Drizzle caramel over popcorn, tossing to coat. Add as little or as much as you would like.
Transfer to an ungreased cookie sheet and place in the oven to bake for 1 hour, stirring popcorn about halfway through. When finished baking, transfer caramel corn to a wax paper lined cookie sheet.
Heat chocolate chips in a small sauce pan over low heat. Stir constantly until chocolate is completely melted smooth. Drizzle over popcorn and add sprinkles.
Let chocolate cool before serving. You can also make this ahead and store in an airtight container for 3-5 days.
Enjoy!
