All week long I posted healthy recipes, so consider this my cheat day! Brownies are right up there with pizza.. no matter what, I can’t refuse them. They’re calorie kryptonite! How do you make brownies even more irresistible? Make them booze infused! Sailor Jerry Rum gives the recipe the extra kick it needs for a batch of gooey, decadent, rum spiked brownies!

Recipe adapted from Baker Street
1 cup (2 sticks) unsalted butter
3oz semi-sweet chocolate
½ cup unsweetened cocoa powder
2 cups sugar
½ tsp coarse salt
½ Tbs vanilla extract
3 eggs
1 ½ cups all-purpose flour
1/3 cup Sailor Jerry Rum
For caramel sauce:
½ cup sugar
1 ½ Tbs water
¼ cup cream
1oz Sailor Jerry Rum
Coarse sea salt
Preheat oven to 350 degrees F (176 degrees C) and butter a 13 by 9 inch baking pan.
(1.) Place butter and semi-sweet chocolate in a medium sized sauce pan and heat on low. (2.) Stir every few minutes until completely melted and smooth. (3.) Remove from heat and stir in cocoa powder, sugar, salt, and vanilla. Beat in eggs one at a time until completely mixed in. (4.) Stir in flour and then rum until completely mixed.
Using a rubber spatula, scrape batter into prepared baking dish and smooth the top. Place in the oven to bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Place on a cooling rack for 1-2 hours on until completely cooled. I usually like to refrigerate mine so they cut easier.
While waiting on the brownies to cook and cool, start on the caramel sauce!
(5.) Add sugar and water to a small sauce pan and bring to a boil over high heat. Do not stir! (6.) Boil the syrup for 6-8 minutes or until a deep amber caramel forms. (7.) Remove from heat and stir in cream. Add Sailor Jerry Rum and stir until combined. Pour the caramel sauce into a large mug or heatproof cup and let it cool slightly. Place in the microwave or on top of the stove to keep slightly warm. (8.) When ready to use, drizzle on top of the brownies and then sprinkle sea salt on top.
Cut into squares and serve!

These look insanely delicious. Do you think amaretto would work well instead of rum? I’m strictly a wine and beer gal who bought too much amaretto for a different recipe long ago …

Oooh that’s a tough one! Amaretto is pretty sweet by itself so I worry that it might make them too rich! If you test it out I would use bitter baking chocolate instead of semi-sweet to tone down the sugary taste. However, if you do end up going with rum, I’ve got an arsenal of recipes that involve using it, so I promise it wouldn’t go to waste! 😉

Best. Brownies. Ever. So yummy! 🙂 I will never make box brownies again! All “scratch” recipes I’ve tried before were grainy and lacking. These are moist, dense, and packed with a smooth chocolate flavor! The rum takes these out of this world. These brownies are delicious, but I’m having problems getting the sugar and water to caramelize. I used a small, heavy-based saucepan over a low heat and did not stir. The sugar slowly melted and it began to boil, but instead of turning a deep amber color, it stayed white and eventually the water evaporated and the mixture crystallized. Any thoughts on what I’m doing wrong?

Hi Lesley! I think the issue is that the heat isn’t high enough. Add the sugar and water to the sauce pan, place burner on the highest heat setting and let it come to a boil. You should see it slowly turn to an amber color rather than evaporate and crystallize. Keep an eye on it though! Just a moment too long and you have burned caramel!

Hi, these look great!
I was wondering if the sauce stays somewhat moist or if it hardens.
I was wanting to allow people to spoon on the topping on to their brownie themselves and was wondering if the sauce would harden too much sitting out.
if so is there something I could add or do to keep it from getting too thick.

Thanks Shirlee! The caramel sauce will not harden up, but will become a bit thicker when it’s cold. I would microwave it for about 10 seconds at a time until warm and slightly runny again before serving.

I’m wondering if these brownies will actually make you feel any kind of tipsy. My boyfriend’s birthday is coming up and the two things he love are chocolate and liquor. Would we need to eat the whole pan to feel buzzed? Thanks! They look delicious!

Hi Olivia! These brownies will NOT get you drunk. You’re more likely to catch a sugar buzz from eating the whole pan than you would an alcohol buzz. While I still don’t recommend serving to children because not all of the alcohol cooks out, an adult will be just fine! 😉 Happy baking!
