I rarely indulge in fried foods unless I’m at the Iowa State Fair or if it’s for fried pickles! I decided to add another indulgence of mine to the mix.. Blue Moon beer! Oh, and as if that wasn’t enough.. I threw Sriracha into the mix to spice up the dipping sauce! If you love any of the three items mentioned above, these are a must try recipe!

(Makes 40-50 fried pickle spears)
Ingredients:
1-2 cups olive oil
40-50 kosher dill pickle spears (we just bought a huge jar of whole pickles and cut them ourselves)
2 eggs
1 cup (3/4 of a 12oz bottle) Blue Moon beer
Salt and pepper to taste
2 cups all-purpose flour
For Spicy Ranch Sauce:
¼ cup ranch dressing
2 tsp Sriracha sauce (you can also use your favorite brand of hot sauce)
Combine ranch and Sriracha in a small bowl. Cover and refrigerate until ready to use.
Add oil to a large skillet and heat over medium heat. Heat for 5-10 minutes or until oil temperature reaches 350 degrees F.
In a large bowl, whisk together eggs and beer until frothy.
Season with salt and pepper and stir. Add flour and stir until well mixed. If batter is too thick, pour a little bit more beer in.
Add about half of the pickles to the bowl and toss to coat. Use tongs to pick up pickles spears one at a time and add to preheated skillet. Cook for 2-3 minutes on each side or until a light golden brown.
Use a fork to flip pickle spears over and cook another 2-3 minutes. Transfer pickles to a paper towel-lined plate and sprinkle lightly with salt.
If you’re cooking for a large group, transfer fried pickles to a baking sheet lined with parchment paper and place in an oven preheated to 200 degrees until ready remaining pickles are cooked and ready to serve.
To make ahead of time, cook all of the pickles and wait for them to cool down on a plate. Place in a zip-lock bag and freeze until ready to use. When ready to cook, preheat oven to 400 degrees F and place fried pickles in a single layer on a baking sheet lined with parchment paper. Bake for 8-10 minutes, flipping about halfway through, or until thoroughly heated.
Serve with spicy ranch sauce and enjoy!
