Let’s just get this out of the way… Beets taste like dirt. They’re just one of those vegetables that you have to learn to love and I’ll admit I’m still working on that. A great way to sneak these vitamin packed root vegetables into your diet are through juices. We’ve been feeling kind of sniffly with all of the weather changes, so I really wanted to boost the antioxidants and vitamin C in this juice. Blood oranges not only contain more vitamin C than any other citrus fruit, but they’re also very sweet which helps mask that ‘earthy’ flavor of the beets! Throw in a handful of blueberries and you’ve got one delicious immune-boosting juice!

Recipe adapted from Reboot with Joe
(makes 2 glasses)
Ingredients:
1 beet, scrubbed, peeled, and quartered (you can also juice the leaves)
1 cup fresh blueberries
4 blood oranges, peeled and cut if too large for the juicer (There’s only 3 pictured, but I ended up adding a 4th. Trust me.. it needs 4!)
2 carrots, leaves and ends removed
By the way… beets stain!
Juice all ingredients into a pitcher or large glass. Stir and distribute between glasses. Serve right away.
