Mojitos have come to be my favorite summer drink for many reasons. They’re sweet, citrusy, and bubbly making them incredibly enticing when you need relief from the unrelenting summer heat. You typically have most of the ingredients on hand already and there’s endless variations of this classic cocktail, so you can make something unique to your taste buds.
I chose blackberries since their flavor is usually best this time of year and tried champagne in lieu of club soda to add some extra crispness. Now before you decide that champagne mojitos sound just far too fancy for you.. keep in mind that I used a bottle of $4 Andre. Because #1: I’m cheap. And #2: I honestly can’t taste the difference between a $4 and a $50 bottle and your guests probably won’t either!

(makes 1 cocktail)
Ingredients:
8 fresh blackberries
8-10 fresh mint leaves
2 tsp sugar
Juice from 1 lime
Ice
1 1/2 oz clear rum
Champagne – the cheaper the better!
Lime slices, blackberries, and fresh mint leaves for garnish
Add blackberries, mint leaves, sugar, and lime juice to a glass. Muddle with the end of a wooden spoon or muddler to release juice from the berries.
Add ice and rum and give it a light stir. Top with champagne, garnish, and serve!
