When I’m not cooking for the blog (who am I kidding? I’m always cooking for the blog!) I like to whip up something easy for dinner. I had an abundance of basil leftover from a previous recipe so I decided to whip up my Simple Basil Pesto and pair it with some pasta and chicken breasts! It was quick, delicious, and filling!

(makes enough for 2)
Ingredients:
2 boneless skinless chicken breasts
Salt and pepper to taste
2 Tbs olive oil
About 1/4th of a 1lb box of linguine
3-4 Tbs olive oil
4 Tbs basil pesto – try my Simple Basil Pesto recipe!
Heat 2 Tbs of olive oil in a large skillet over low-medium heat. You can also grill the chicken breasts, just rub a bit of olive oil on the grill grate and heat on low-medium.
(1.) Season the chicken breasts with salt and pepper and place in the skillet once hot. Cook 5-7 minutes on each side or until thoroughly cooked. Just cut into the underside of one of the chicken breasts to make sure the middle is no longer pink. (2.) While waiting for the chicken to cook, bring a large pot of salted water to a boil. Add pasta and cook for 8-10 minutes or until al dente. Drain pasta and return to pot. (3.) Toss with 3-4 Tbs of olive oil, (4.) add pesto and continue to toss pasta until evenly coated with pesto.
Plate pasta, top with chicken breasts, and serve!

This looks great! I love quick simple dinner! ^_^ The husband and I (by the way, that’s totally fun to say as a newlywed!) just whipped up something similar this past week – pesto rotini with a can of Muir Glen diced tomatoes on top – super simple and yummy!

This looks amazing and it’s making me, so hungry. I’ve really grown into pesto as I get older but I’ve never made it fresh. Definitely going to have to up my game and start growing basil again 🙂
